Ceylon Pepper, with its higher value in piperine content which makes it more superior in quality and pungency is endemic to Ceylon. Pepper, often called as “King of Spices” comes in a range of grades and they are used for extraction of essential oil and oleoresins. White pepper, milder in taste and smell, is mostly used for aesthetic purposes. Made from drupes left on the vines for a longer period until they turn lighter, blanching the drupes in hot water and then cleaning and drying, prior to grinding them into a fine powder.
